Ingredients:
- 1/3 cup Melrose Coconut Cashew Butter
- 2 tablespoons Melrose Coconut Oil Full Flavour or Flavour Free, melted
- 4 tablespoons Melrose Go For Longer MCT Oil
- ¼ cup rice malt syrup
- 1 teaspoon vanilla essence
- Zest and juice of 1 lemon
- 1½ cup desiccated coconut
- ½ cup almond meal
Method:
Combine wet ingredients in a large bowl and stir to combine.
Add 1 cup desiccated coconut and almond meal to the mix and stir until it forms a dough-like texture.
Begin to create bites by using your hands to roll the mixture into round balls and coat with remaining coconut.
Chill in the fridge for 20-30 minutes before serving. Enjoy.
