Ingredients:
- 200g pasta of choice
- 2 medium avocados
- ¼ cup olive oil
- 2 tsp Melrose Organic Essential Greens
- 2 cups basil, fresh
- 2 cloves garlic, crushed
- ½ lemon, juiced
- ¼ cup nutritional yeast
- Salt and pepper to taste
Method:
1. Prepare the sauce by combining avocado, olive oil, greens, basil, garlic, lemon, nutritional yeast and salt and pepper in a blender or food processor. If it is not combining, add a touch more olive oil.
2. Bring a medium pot of water to the boil. Plunge in the pasta and cook according to packet instructions. Drain and add to a large bowl.
3. Add the prepared sauce to the pasta and toss to combine.
