Ingredients:
- 2 large ripe avocados, peeled & pitted
- 2 tablespoons Melrose Going Faster MCT oil
- 2 tablespoons red onion, finely chopped
- 1 garlic clove, peeled & crushed
- 2 tablespoons lime juice
- 1 tomato, seeded & finely chopped
- 2 tablespoons coriander, plus extra to garnish
- 1 red chilli, seeded &finely chopped (optional)
- ½ teaspoon sea salt
Method:
In a large bowl, mash avocados with a fork.
Add remaining ingredients and mix well until combined.
Transfer into a serving bowl and garnish with coriander leaves.
Serve with vegetable sticks for a nutrient-dense snack or corn chips if entertaining.
