These spiced nuts are our most versatile Christmas recipe! Package up as handmade gifts, serve as pre lunch nibbles or sprinkle over a salad for a hit of sweet crunch.
- 500g raw mixed nuts (cashews, almonds, hazelnuts, pecans, walnuts)
- ¼ cup Melrose Organic Ghee
- ¼ cup pure maple syrup
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ½ teaspoon ground nutmeg
- 1 teaspoon salt flakes
- ½ cup pumpkin seeds
Preheat oven to 170 degrees. Place mixed nuts in a large baking tray and spread them out evenly. Place in oven and roast for 5 minutes, then stir nuts to toast evenly and then roast for a further 5 – 10 minutes until light golden in colour.
Place Melrose Organic Ghee in small saucepan, add maple syrup, spices and salt and whisk well to combine.
Remove nuts from oven, add pumpkin seeds and toss well, then pour over ghee and maple mixture, and toss nuts and seeds well to coat evenly. Place back in oven and cook for 10 minutes, before stirring the nuts well to toast evenly, and place back in the oven for a further 10 minutes. Remove from oven and allow to cool before serving. Nuts will harden as they cool. When cool, store in air tight container.
