Ingredients:
- 1 slice sourdough
- ½ cup green peas, defrosted
- 1 tsp Melrose Organic Essential Greens
- ¼ lemon, zested and juiced
- 2 tbsp mint, chopped
- ½ tbsp Melrose Organic Extra Virgin Olive Oil
- Salt and pepper, to taste
Method:
1. Place the bread in the toaster.
2. In a small bowl, place the peas, greens, lemon, mint, olive oil, salt and pepper. Smash and mix together using the back of a fork. Serve on top of the toast.
