Ingredients:
- ¼ cup hemp protein
- ¼ cup almond milk
- 1 medium egg
- 1 pinch sea salt
- Coconut oil for cooking
Topping
- ½ avocado
- 1 tsp Melrose Essential Greens
- 1 tsp olive oil
- ¼ cup sprouts
- ½ lemon
- 2 tbsp pepitas
- Salt and pepper to taste
Method:
1. To make the pancakes, combine the egg, hemp protein, almond milk and salt in a bowl and stir well.
2. Heat a pan over a medium heat and grease with a little coconut oil. Pour mixture into the pan, enough to make 2 or pancakes.
3. Leave to cook and wait until bubbles appear, about 2–3 minutes. Flip with a spatula and cook on the other side for 2 minutes.
4. In a small bowl mash the avocado and add the greens and lemon juice, season with salt and pepper.
5. Serve the pancake with the avo smash, sprouts, toasted seeds and a drizzle of olive oil.
