Ingredients:
- 2 zucchini, sliced into ribbons
- 2 cups rocket
- 2 bunch asparagus, blanched and chopped
- ยผ cup Super Green Pesto (https://www.melrosehealth.com.au/recipes/item/super-green-pesto)
- 4 tablespoons walnuts
- 60g goats cheese, optional
- Sea salt and black pepper, to season
Method:
In a large bowl combine zucchini, rocket and asparagus.
Add Super Green Pesto, ยฝ the walnuts and goats cheese, season and toss well to combine.
Serve into plates and top with remaining walnuts and cheese.
