Ingredients:
- 60 spinach and rocket leaves
- 40g red cabbage, finely chopped
- 1 carrot, grated
- 1 raw beetroot, grated
- ¼ bunch coriander, roughly chopped
- ¼ bunch basil, roughly chopped
- 100g blueberries
- 1 avocado, diced
- 1 tablespoon Melrose MCT Kick Start oil
- 1 tablespoon Melrose Apple Cider Vinegar
- ½ lemon, juiced
- 4 tablespoons pumpkin seeds
- 50g goats feta, crumbled
- Salt & pepper, to taste
Method:
In a large bowl, combine all the vegetables, herbs, blueberries and avocado.
To make the dressing, add MCT oil, apple cider vinegar, lemon and salt and pepper to a small bowl and whisk thoroughly.
Gently toss dressing through salad ingredients and top with pumpkin seeds and feta.
